We interested in oleoresin capsicum with next
parameters:
Organoleptic characteristics:
Tenacious dark greyish brown viscous(very thick!!!) substance, lightly soluble in 70% alcohol
with water 1:10 gives turbid solution greyish brown colour.
It is not soluble in ether, chloroform.
Analytical Tests:
Capsaicin content(HPLC method) - 1%;
Residual solvent - below 50ppm;
Loss on Drying - from 13 to 17%;*
pH - from 3,5 to 5,5%;
Heavy metals - not more than 20 ppm;
Microbial Analysis - total plate count below 1000Cfu/g.
