Hello sir
My company is based in tunisia, a muslim country.
We have govermental licence of treating and exporting omasum and tripe.
The licence de have is haccp based and we do respect persons who will consume our products hamdulillah.
Actually, our omasum is washed in 3 steps.
First step : Omasum is washed and emptied immediately after beef and cow death with cold water.
Second step: Omasum is taken to our locals in air conditioned mobile units and washed with rotating brushes under smooth and cold water pressure.
Third step : Omasum is filled in washing machine under warm water to separate microscopic particles and remain smell.
We do not use detergents or boiling water at all.
